Fudgie Chocolate Oatmeal No-Bake Cookies

Need a super fast dessert you can whip together when you're craving a piece of chocolate, have seriously nothing sweet in the house, and don't feel like slaving over a hot oven for an hour to bake up something delicious?


 

My sister and I used to make these chocolate no-bake cookies all the time when we were kids, but I practically forgot about them until last night, when I needed some chocolate to go with my glass of red wine and only had 10 minutes before we were about to start a movie.


They don't look like much, but they are fudgie, chewy and super chocolatey. You basically just boil everything together in a pot for a minute, then drop them out onto wax paper to dry. You could also play around with flavorings and add peanut butter, chopped nuts, coconut extract or anything else you feel like. They are perfect when you need a quick fix.


Cookies in 20 minutes? I'm in trouble. ;-)

Fudgie Chocolate Oatmeal No-Bake Cookies

Makes 10 cookies

Ingredients
1 cup sugar
1/4 cup cocoa
1/4 cup butter
1/4 cup milk
1 tsp. vanilla
1 1/2 cups oatmeal

Combine sugar, cocoa, butter and milk in a saucepan. Heat over medium heat and bring to a boil; boil for one minute. Remove from heat and add vanilla and oatmeal. Drop by spoonfuls onto waxed paper and let sit for 20 minutes, until hardened. Cookies will be soft and fudgie, but should be fully set.
